About the Paolo Bea San Valentino Umbria Rosso 2016
Crafted in the rolling hills of Montefalco in Umbria, Italy, Paolo Bea San Valentino 2016 is a soulful, highly expressive natural red wine produced by artisan winemaking legend Paolo Bea. Sourced from the single "San Valentino" vineyard located at 1,000 feet above sea level on gravelly clay and limestone soils, this cuvée is a blend of 70% Sangiovese, 15% Montepulciano, and 15% Sagrantino. True to the Bea family’s traditional non-interventionist ethos, the hand-harvested grapes undergo spontaneous fermentation with wild yeasts and a extended skin maceration of over 30 days in stainless steel. Aged for over three years in neutral Slavonian oak casks followed by extensive resting in the bottle, it is bottled unfined and unfiltered according to lunar phases, capturing the pure, rustic elegance of Umbrian terroir.
Food Pairing: Classic Italian ragù with pappardelle, roasted lamb chops, grilled ribeye steak, mushroom risotto, duck breast, and aged Pecorino cheese.
