About the Paolo Bea Rosso de Veo Umbria IGT 2016
Crafted in Montefalco, Umbria, Paolo Bea Rosso de Veo 2016 is an extraordinary natural red wine made from younger Sagrantino vines across the family estate’s various vineyard parcels (including Pagliaro and Cerrete). Produced in limited quantities, Rosso de Veo serves as an approachable gateway to Sagrantino’s immense depth while retaining all the uncompromising, artisan hallmarks of the Paolo Bea estate. Fermented with indigenous yeasts and subjected to an extended 30 to 40-day skin maceration, the wine ages for over three years in large, neutral Slavonian oak casks followed by significant cellar aging. Unfined, unfiltered, and bottled according to lunar cycles, it offers raw power, rustic elegance, and remarkable clarity of terroir.
Food Pairing: Braised beef short ribs, roasted leg of lamb with herbs, wild boar ragù, grilled T-bone steak, truffle risotto, and aged hard cheeses like Pecorino or Parmigiano-Reggiano.
