About the Paolo Bea Pipparello Montefalco Rosso Riserva 2016
Crafted in the famed hills of Umbria, Italy, Paolo Bea Pipparello Montefalco Rosso Riserva 2016 is a rare, highly sought-after natural red wine produced by legendary natural winemaking master Paolo Bea. Sourced from the single "Pipparello" vineyard situated at 1,300 feet above sea level on gravelly clay soils, this cuvée is a blend of 60% Sangiovese, 25% Montepulciano, and 15% Sagrantino. True to Paolo Bea’s non-interventionalist philosophy, the hand-harvested grapes undergo a spontaneous fermentation with native yeasts and extended skin contact for over a month in stainless steel tanks. Aged for over three years in large Slavonian oak casks followed by extensive resting in the bottle, it is bottled unfined and unfiltered according to lunar cycles, delivering a pure, uncompromising expression of artisan Umbrian winemaking.
Food Pairing: Slow-braised beef short ribs, roasted leg of lamb with rosemary, wild boar ragù with pappardelle, grilled Florentine steak, and aged hard cheeses like Pecorino Stagionato or Parmigiano-Reggiano.
