About the Paolo Bea Montefalco Sagrantino Passito 2012 375ml
Crafted in the historical heart of Umbria, Italy, Paolo Bea Montefalco Sagrantino Passito 2012 is a monumental, rare sweet red wine that represents the most traditional expression of the Sagrantino grape. Historically, Sagrantino in Montefalco was exclusively vinified as a sweet passito wine for religious ceremonies and celebrations before dry styles became common. Hand-selected Sagrantino bunches are air-dried on traditional wooden and straw racks (graticci) for up to four months, concentrating sugars, flavors, and acids as the berries shrink. The dense, raisined fruit undergoes a slow fermentation with indigenous yeasts followed by prolonged aging in neutral Slavonian oak barrels and stainless steel without temperature control, fining, or filtration.
Food Pairing: Traditional Umbrian lamb dishes, dark chocolate tarts, blue cheeses like Gorgonzola Piccante or Roquefort, panettone, dry nut pastries, and aged Pecorino cheese.
