Crafted in the rugged hills of Umbria, Italy, Paolo Bea Pagliaro Montefalco Sagrantino 2016 is a towering masterpiece of natural winemaking and traditional artisan craft. Produced by the legendary Paolo Bea estate, this single-vineyard flagship red is sourced from the "Pagliaro" vineyard, situated at 1,300 feet above sea level on clay-gravel soils. Made entirely from Sagrantino—a grape famous for possessing some of the highest polyphenol and tannin levels in the wine world—the fruit undergoes an extended 30 to 40-day maceration with indigenous yeasts in stainless steel. True to the estate's non-interventionalist ethos, the wine is aged for over three years in large, neutral Slavonian oak casks followed by significant bottle aging. It is bottled unfined and unfiltered according to lunar cycles, producing an extraordinarily authentic, long-lived expression of pure Umbrian terroir.
Food Pairing: Braised wild boar ragù, slow-roasted lamb shank, Florentine T-bone steak, venison stew, truffle-infused dishes, and deeply aged cheeses like Pecorino Stagionato or Parmigiano-Reggiano.
