About the Bodegas Cota 45 UBE Maina Paganilla de Uberrima
Crafted by acclaimed winemaker Ramiro Ibáñez in Sanlúcar de Barrameda, Bodegas Cota 45 UBE Paganilla (UBE Maina) De Uberrima is a revolutionary, unfortified white wine from Andalusia, Spain. Championing the revival of historical Vino de Pasto table wines, Ibáñez focuses on expressing single-vineyard terroir rather than high alcohol or prolonged oxidation. Sourced from 60-year-old Palomino Fino vines in the inland "Pago Paganilla"—grown on chalky, fossil-rich albariza soils—the grapes are hand-harvested and fermented with native yeasts in century-old Sherry butts. Aged under a fine, delicate veil of flor (yeast layer) for several months, this wine offers exceptional texture, electric acidity, and raw mineral precision.
Food Pairing: Fresh oysters, salt-baked sea bass, grilled octopus, tapas, cured jamón Ibérico, and aged Manchego cheese.
