About the Olmeca Altos Tequila Anejo
Crafted in Arandas, in the high-elevation Los Altos region of Jalisco, Mexico, Olmeca Altos Añejo is an award-winning, additive-free 100% Blue Weber Agave Tequila produced at the Destilería Colonial de Jalisco (NOM 1111). Co-created by Master Tequilero Jesús Hernández alongside renowned late UK bartenders Henry Besant and Charles Vexenat, Altos was engineered specifically to balance cocktail versatility with traditional, small-batch tequilero integrity. Made from 100% estate-grown Blue Weber agave (Agave tequilana) cultivated in mineral-rich red volcanic clay soil at over 7,000 feet above sea level, the agave hearts mature for 7 to 8 years before being slow-cooked in traditional stone masonry brick ovens (mampostería). Uniquely, a significant portion of the cooked agave is crushed using a traditional 500-year-old volcanic stone tahona wheel alongside modern roller mills to maximize depth and body. After open fermentation with natural yeasts, the wash is double-distilled in small copper pot stills and aged for 18 months in 200-liter medium-toasted American oak bourbon barrels. The result is a smooth, sophisticated añejo that harmonizes rich cooked agave sweetness with toasted oak, dried fruit, vanilla, and warm baking spices.
Food Pairing: Slow-cooked beef short ribs, mole poblano, grilled ribeye steak, aged Manchego cheese, dark chocolate truffles, or caramelized pecan pie.
Tasting Notes: Deep amber-gold in appearance with warm copper highlights, brilliant clarity, a rich, velvety medium-to-full body, and slow, coating tears.
Nose: Warm and inviting, opening with rich cooked agave, toasted oak, and fragrant vanilla bean, accompanied by dried fruits (figs and raisins), roasted hazelnut, butterscotch, and subtle cinnamon spice.
Palate: Velvety, smooth, and well-rounded on the palate, featuring caramelized agave nectar, dark chocolate, and sweet vanilla upfront before unfolding into toasted oak tannins, nutmeg, candied orange peel, light black pepper, and subtle almond butter.
Finish: Long, warm, and satisfying with lingering notes of sweet agave, toasted oak wood, gentle baking spices, and a soft, dry cocoa warmth.
Serve: Enjoy neat at room temperature in a Glencairn glass or Riedel Tequila glass to savor its rich oak maturation, or use as a luxurious foundation for elevated cocktails like an Añejo Old Fashioned or Tequila Manhattan.
