Oenops Wines Xinomavraw Natural Red

Crafted by winemaker Nikos Karatzas at Oenops Wines in Drama, Northern Greece, 'Xinomavraw' is a fresh, modern interpretation of Xinomavro, one of Greece’s most noble and celebrated indigenous red grape varieties. Sourced from exceptional old vines planted at high altitudes in the cool-climate regions of Naoussa and Amyndeo, the fruit is crafted with minimal intervention. Fermented spontaneously with indigenous yeasts in amphorae (clay qvevri) and concrete tanks, it undergoes gentle extraction and zero oak contact to highlight the grape's raw, unadulterated fruit purity and terroir expression.

Food Pairing: Duck breast with cherry reduction, grilled lamb chops, mushroom ragout, roasted pork, tomato-based pasta, and aged feta or gouda cheese.
