About the Oenops Wines Rawditis Natural White
Crafted by winemaker Nikos Karatzas at Oenops Wines in Drama, Northern Greece, 'Rawditis' is an innovative interpretation of the pink-skinned Roditis grape. Sourced from old, dry-farmed bush vines situated at high altitudes (above 600 meters) in the mountainous terroir of Macedonia, the wine is made with minimal intervention. Fermented spontaneously with wild yeasts in amphorae (clay qvevri) and concrete tanks with prolonged skin contact, it is bottled unfined and unfiltered with minimal sulfur.
Food Pairing: Roasted chicken, grilled pork chops, grilled octopus, wild mushroom dishes, and mature goat cheese.
