Founded by visionary winemaker Nikos Karatzas, Oenops Wines focuses on minimal-intervention techniques to highlight the authentic character of unique Greek terroirs. Sourced from low-yielding, old bush vines grown on cool-climate hillside vineyards, the grapes undergo gentle ambient yeast fermentation in a combination of clay amphorae, concrete vats, and large oak casks. This careful maturation preserves the grape's natural brightness, silky elegance, and vibrant aromatics without overriding oak influence.
