The Dubh Glas Distillery Noteworthy Gin Barrel Rested 375ml

The Dubh Glas Distillery Noteworthy Gin Barrel Rested is a award-winning Canadian craft spirit produced in Oliver, British Columbia. Made using 100% British Columbia-grown barley fermented in-house and triple distilled in a custom German copper pot still, this expression rests in oak barrels for up to two years. The oak aging process imparts a delicate pale gold hue and a rich, rounded character, marrying the distillery's signature floral and citrus botanical profile with warm wood and baking spice nuances.

Food Pairing: Grilled pork chops, duck breast with fruit reduction, aged Cheddar, charcuterie, and toasted pecan tarts.

Tasting Notes: Pale gold in appearance with a rich, silky, and coating mouthfeel.

Nose: Complex and fragrant up front with notes of soft floral carnation, sweet floral gum, and citrus peel, backed by dry oak, resinous pine juniper, and white pepper spice.

Palate: Impeccably balanced and warm, displaying layers of sweet cinnamon heart candy, candied citrus, and soft vanilla, integrated with rich toasted oak, subtle baking spices, and a smooth malt backbone.

Finish: Long, smooth, and dry with lingering notes of warm oak spice, gentle pine, and subtle citrus sweetness.

Serve: Serve neat, over a large clear ice cube, or use as a sophisticated substitute for whiskey in a classic Martinez, Boulevardier, or Gin Old Fashioned.
