North British 1991 Signatory Vintage is an exceptional 33-year-old Lowland single grain Scotch whisky, distilled on September 2, 1991, and bottled on December 16, 2024, at 53.2% ABV. Selected from a single refill Oloroso Sherry butt for Signatory Vintage's Cask Strength Collection, this limited release offers an elegant combination of creamy vanilla, golden caramel, dried fruit and polished oak. Rich notes of butterscotch, baked apple and toasted nuts develop alongside gentle sherry sweetness and warming spice.

Food Pairing: Dark chocolate, aged Gouda, roasted almonds, caramel desserts, apple tart, pecan pie, dried figs or crème brûlée.

Tasting Notes: Rich and velvety, with vanilla custard, caramel, dried fruit, butterscotch, toasted almonds and warming oak spice.

Nose: Creamy vanilla, golden honey, caramel and toasted coconut, complemented by dried fruit and polished oak.

Palate: Smooth and full-bodied, with toffee, crème brûlée, baked apple, roasted almonds and delicate sherry sweetness.
