About the Noguchi Naohiko Sake Institute Yamahai Omachi
Crafted in Komatsu City, Ishikawa Prefecture, Japan, Noguchi Naohiko Sake Institute Yamahai Omachi is a masterwork of traditional Japanese sake brewing supervised by living legend Naohiko Noguchi, widely revered as the "God of Sake Brewing" (Sake no Kamisama). Celebrated for his unrivaled expertise in the ancient Yamahai method, Noguchi-san utilizes this time-honored, natural fermentation process to cultivate rich, complex starter cultures. Sourced from 100% heirloom Omachi rice—Japan’s oldest strain of sake rice, famed for producing deep, earthy, and herbal flavor profiles—this cuvée showcases the perfect synergy between Omachi's rustic character and the Yamahai method's signature umami and natural acidity.
Food Pairing: Yakitori (especially tare-glazed chicken skin or liver), braised pork belly (kakuni), sukiyaki, grilled unagi, aged cheeses, and earthy mushroom dishes.
