About the Nikolaihof Vinothek Reisling
Crafted in Austria’s historic Wachau region, Nikolaihof Vinothek Riesling is an iconic, world-renowned white wine produced by the Saahs family at Europe’s oldest recorded winery, dating back over 2,000 years. As Austria’s pioneer of Demeter-certified biodynamic viticulture since 1971, Nikolaihof crafts this legendary bottling from hand-harvested Riesling grown on steep, terraced vineyards of primary rock (Gneiss) and loess. What sets the Vinothek bottling apart is its extraordinary, legendary aging process: after fermentation with indigenous yeasts in ancient 3,500-to-10,000-liter neutral oak casks (Fuder), the wine rests untouched on its fine lees in deep underground cellars for up to 15 to 17 years before bottling, without sulfur additions during aging, fining, or filtration.
Food Pairing: Pan-seared sea bass, roasted goose or duck, lobster thermidor, truffled mushroom risotto, Wiener Schnitzel, and aged mountain cheeses like Gruyère or Appenzeller.
