Millstone Single Malt 7Yo Pajarete Cask

Millstone Special #36 7 Year Old Pajarete Cask Dutch Single Malt Whisky is a limited release from Zuidam Distillers, distilled in 2018 and matured for seven years in rare Pajarete wine casks. Bottled in 2025 at 46% ABV with an outturn of just 687 bottles, this distinctive Dutch single malt combines rich malt character with the sweet, vinous influence of Pajarete, developing layers of dried fruit, caramel, nuts, warm spice and oak. 

Food Pairing: Pair with aged Gouda, roasted nuts, charcuterie, glazed pork, dark chocolate or dried-fruit and caramel desserts.

Tasting Notes: Rich and bittersweet with dried and candied fruit, caramel, walnuts and warming spices balanced by vinous notes, seasoned oak and a gently herbal character.

Nose: Dried fruit and sultanas with caramelized sweetness, orange, subtle leather, nuts and warming spice.

Palate: Sweet and rounded with caramel, walnuts and candied fruit, followed by wine-driven fruitiness, clove, orange and gently bitter herbal notes.

Finish: Lingering and bittersweet, with caramelized sugar, dried fruit, warming spice, leather and seasoned oak.
