About the Derrumbes Durango Mezcal
Derrumbes Durango Mezcal is an artisanal mezcal produced in Northern Mexico, crafted by Maestro Mezcalero Uriel Simental using wild-harvested Agave Durangensis (Cenizo). Pit-roasted in underground stone ovens with wood, naturally fermented in subterranean oak-lined pits, and small-batch distilled in traditional copper stills, it delivers a complex, fruit-forward, and lightly smoky profile characteristic of the high-desert terroir of Durango.
Food Pairing: Grilled carne asada, smoked pork belly, mole negro, aged manchego cheese, or dark chocolate with sea salt.
Tasting Notes : Crystal clear with brilliant clarity and a full, oily, and coating mouthfeel.
Nose : Bright citrus peel, tropical fruit, sweet papaya, pine needles, subtle floral notes, and delicate wood smoke.
Palate : Complex and vibrant with rich cooked agave, sweet tropical fruit, ripe lime, dark chocolate, soft minerality, and gentle mesquite smoke.
Finish : Long, dry, and warm with lingering notes of sweet agave, earth, pine, and soft wood smoke.
Serve : Serve neat at room temperature in a traditional veladora glass or copita.
