Animas Papalote Mezcal

Crafted in Oaxaca, Mexico, Ánimas Papalote (also known as Papalometl) is a rare single-varietal artisanal mezcal produced by maestro mezcalero Luis Angeles using wild Agave cupreata. Foraged from high-altitude mountainous terrain, these wild agaves mature for up to 12 years before being harvested. The mature piñas are slow-cooked in traditional underground conical stone pits using local oak wood, crushed using a horse-drawn stone tahona wheel, and open-fermented in pine wood vats with natural wild airborne yeasts. Double-distilled in traditional copper pot stills, this unaged expression highlights the wild Cupreata’s distinctive, bright floral and fruit-forward profile, layered over subtle mesquite smoke and crisp mineral earthiness.

Food Pairing: Fresh ceviche with mango, grilled shrimp skewers, roasted pork carnitas, fresh goat cheese, citrus salad, or dark chocolate with orange peel.

Palate: Smooth, round, and complex on the palate, featuring caramelized agave nectar, ripe melon, and sweet citrus upfront before unfolding into soft wood smoke, white pepper, green herbs, and gentle earthy minerality.

Finish: Medium-long, clean, and refreshing with lingering notes of sweet agave, soft oak smoke, herbal spice, and a zesty citrus lift.

Serve: Enjoy neat at room temperature in a traditional clay copita or Glencairn glass to allow the complex floral and fruit aromas of the wild Papalote agave to fully open.
