About the Animas Espadin/Papalote Mezcal
Crafted in Oaxaca, Mexico, Ánimas Espadín / Papalote is a complex, small-batch ensamble artisanal mezcal produced by maestro mezcalero Luis Angeles. Combining cultivated Espadín (Agave angustifolia) from Oaxaca with wild Papalote (Agave cupreata) harvested from the rugged terrain of Guerrero, the mature agave piñas are co-cooked in traditional underground conical stone pits using oak wood. Crushed using a horse-drawn stone tahona wheel and open-fermented in wooden vats with native airborne yeasts, the mixture is double-distilled in classic copper pot stills. This unique cross-regional blending delivers a multi-dimensional profile that pairs Espadín’s earthy smoke and citrus core with the bright, floral, and herbaceous complexity of wild Papalote in a standard 750ml bottle format.
Food Pairing: Grilled lamb chops, Oaxacan mole negro, roasted pork carnitas, fresh goat cheese, ceviche with avocado, or dark chocolate with sea salt.
Tasting Notes: Crystal clear in appearance with brilliant clarity, a rich medium body, and slow-dripping, delicate tears.
Nose: Complex and expressive, opening with sweet cooked agave, light mesquite smoke, and bright orange blossom, supported by green bell pepper, fresh mint, damp earth, and subtle tropical fruit.
Palate: Well-rounded and textural on the palate, featuring caramelized agave nectar and ripe melon upfront before unfolding into soft wood smoke, cracked white pepper, green herbs, citrus peel, and a distinct mineral earthiness.
Finish: Medium-long, clean, and balanced with lingering notes of gentle oak smoke, herbal spice, zesty lime, and a sweet agave warmth.
Serve: Enjoy neat at room temperature in a traditional clay copita or Glencairn glass to experience the full aromatic depth of this dual-agave ensamble.
