Mercouri Estate Kallisto Assyrtiko

Crafted by the historic Mercouri Estate in the western Peloponnese region of Ilia, Greece, 'Kallisto' (meaning "the fairest" or "most beautiful" in ancient Greek) is an elegant white wine built primarily around Greece’s celebrated Assyrtiko grape variety. Sourced from coastal estate vineyards overlooking the Ionian Sea, the grapes benefit from maritime cooling breezes, sandy-clay soils, and abundant Mediterranean sunshine. Fermented under controlled low temperatures in stainless steel tanks and aged on its fine lees (sur lie) with regular bâtonnage, it combines varietal crispness and coastal salinity with enhanced textural complexity.
