Food Pairing: Pairs wonderfully with dark chocolate-dipped figs, slow-braised beef short ribs in red wine reduction, or rich, aged blue cheeses like Roquefort.

TASTING NOTES A deep polished mahogany color with a dense, oily, and coating mouthfeel.

NOSE Heavily sherried and aromatic, bursting with dark Oloroso, stewed raisins, dark honey, orange marmalade, warm cinnamon, and a hint of polished antique wood.

PALATE Rich, oily, and concentrated on the tongue with a massive wave of dark cherries, ripe plums, dark cocoa, leather, and toasted walnuts, followed by a delicate herbal undertone.

FINISH Long, warm, and deeply satisfying, leaving lingering notes of dark fruit compote, walnut liqueur, sweet tobacco, and espresso.

SERVE Best enjoyed neat in a tulip or Glencairn glass. Adding a few drops of soft spring water opens up the heavy sherry oils and highlights the underlying fruity character.
