About the Milk & Honey Apex PX Sherry Cask 56.9% ABV 700ml
Milk & Honey, or M&H to their buds, should be on everyone's radar by now. Their range is sprawling, the team has an eye to innovation, and maybe most importantly...they know how to handle casks that have previously held wine (including port and sherry). This is unquestionably the influence of the late Dr. Jim Swan, whose legacy will forever be secure based on the STR process alone. But none of that matters unless you have good spirit. Milk & Honey has good spirit.
The Apex range consists of the more experimental end of the M&H portfolio, and the single cask range with the Apex range takes that a step further in terms of oomph and intensity. This single PX Sherry Butt (#2018-0900) yielded just 544 bottles at the ripe ol' age of 3. In this sort of climate, you don't need a lot of years to reach a state of complexity.
