About the Luneau-Papin Pueri Solis
Pueri Solis 2023 is made entirely from Melon de Bourgogne grown in La Chapelle-Heulin on schist and mica schist bedrock. Spontaneous fermentation with indigenous yeasts precedes 16 months of maturation in underground concrete tanks lined with glass tiles, without racking.
Food Pairing: Pairs best with braised chicken, chanterelle mushrooms, aged Comte, or seared red gurnard.
