About the Los Siete Misterios Espadin Cuishe Mezcal
Joven ensamble made from a blend of Espadín and Cuishe agaves. The agaves are cooked in traditional underground earth ovens using wood and river stones, then double-distilled in copper pot stills. The Cuishe component comes from the Agave karwinskii family and contributes herbal and mineral character to the blend.
Food Pairing: Grilled meats, roasted pork carnitas, fresh ceviche, grilled octopus, and aged cheeses.
Tasting Notes: Crystal clear with a medium body and light viscosity, offering a bright, well-balanced mouthfeel with structured mineral complexity and subtle herbal undertones.
Nose: Cooked agave upfront accompanied by fresh herbal notes, pine, citrus peel, green pepper, and a gentle backdrop of wood smoke.
Palate: Well-rounded and crisp, featuring sweet roasted agave, citrus zest, subtle tropical fruit, dry herbs, green pepper, and soft, clean smoke.
Finish: Medium-to-long finish with lingering notes of earthy minerals, herbal freshness, light pepper, and gentle campfire smoke.
Serve: Served neat at room temperature in a traditional copita or wide-rimmed glass.
