Los Danzantes Coyote Mezcal

An exceptional artisanal Joven Mezcal produced in Oaxaca from 100% wild Maguey Coyote (a rare variety of Agave americana / Agave lyobaa). The wild coyote agaves are harvested after maturing for up to 12 to 15 years in rugged terrain. Crafted using traditional methods, the agave hearts are roasted in underground stone pits, crushed by a horse-drawn tahona, naturally fermented with ambient yeasts in wooden vats, and double-distilled in copper alembic stills to create a highly complex, mineral-forward, and expressive mezcal.

Food Pairing: Rich braised short ribs, dark chocolate tarts, mole negro, roasted duck, and aged hard cheeses.

Tasting Notes: Crystal clear with high viscosity and slow-forming legs, providing a full-bodied, silky mouthfeel defined by bright wild agave sweetness, rich earthiness, and complex floral nuances.

Nose: Vibrant and complex with notes of ripe tropical fruit, sweet cooked agave, wild wildflowers, damp earth, wet stone minerals, and soft wood smoke.

Palate: Deep and velvety on the palate, featuring sweet roasted agave, citrus zest, green herbs, dark chocolate tones, subtle pepper spice, and well-integrated campfire smoke.

Finish: Long, warm, and memorable, lingering with notes of sweet agave, rich minerals, light cocoa, and soft, clean smoke.

Serve: Served neat at room temperature in a traditional copita or wide-rimmed glass to allow its complex aromas to unfold completely.
