Two Dijon clones are involved here (115 and 667), and each is kept separate before blending seven months in 40% new French oak, 20% neutral oak, and 40% stainless steel. The style is New World rustic with earth, black cherry, and blueberry, with a brush of dried herbs and dry tannins. Best now with pork or duck dishes.
