Her name is Fabiola Ávila and she has a degree in Biochemistry and Biotechnology with a specialization in fermentation from the Technological Institute of Durango. Raul Resendiz is a biochemist who also assists in the production of this mezcal. This mezcal is unaged and has a slight smoky flavor with a subtle herbal aroma. The ABV may vary slightly by batch.
