La Venenosa Tabernas 3rd Edition Reposado is a groundbreaking aged Raicilla produced by Maestros Taberneros José and Benito Salcedo Rios in the village of El Mosco. Crafted from cultivated and wild agaves, pit-roasted with black oak, fermented with wild yeast, and double-distilled in stainless steel and copper stills, it is rested for three months in ex-Oloroso sherry casks. This maturation process softens the spirit's natural rustic brightness while imparting delicate oak, dried fruit, and warming baking spice notes.
Food Pairing: Roasted pork belly, grilled duck breast, aged manchego cheese, dark chocolate with sea salt, or savory mole dishes.
Tasting Notes : Light amber-gold with slow-forming legs and a round, medium-bodied, slightly tannic mouthfeel.
Nose : Toasted oak, almond, sweet toffee, cooked agave, and subtle herbaceous notes.
Palate : Crisp red apple, sweet roasted agave, oak tannins, butterscotch, and warm cinnamon spice.
Finish : Long, warm, and structured with lingering notes of sherry wood, dried fruit, and a delicate touch of pepper.
Serve : Serve neat at room temperature in a glass tasting vessel or traditional copita, allowed to breathe for a few minutes.
