About the La Venenosa Sierra Occidental de Jalisco 2025 (41.2%)
La Venenosa Sierra Occidental de Jalisco is an artisanal Raicilla produced by Maestro Tabernero Don Ruben Peña in the high-altitude pine forests of Jalisco. Pit-roasted in an adobe oven, fermented with wild yeasts in wooden vats, and double-distilled in a hybrid wood-and-copper still, it offers a remarkably balanced, crisp, and citrus-forward agave profile.
Food Pairing: Grilled seafood, ceviche, fresh oysters, citrus-marinated chicken, or goat cheese.
Tasting Notes : Crystal clear in appearance with a clean, light-to-medium-bodied, and smooth mouthfeel.
Nose : Fresh citrus peel, lime zest, pine needles, sweet roasted agave, and subtle floral notes.
Palate : Bright lemon-lime citrus, papaya, green herbs, gentle smoke, and clean earthy minerality.
Finish : Medium-long, crisp, and refreshing with lingering citrus, mild pepper, and herbal notes.
Serve : Serve neat at room temperature in a glass tasting vessel or traditional clay copita.
