About the La Venenosa Sierra del tigre de Jalisco 2025 (44.4%)
La Venenosa Sierra del tigre de Jalisco is a rare, ancestral Raicilla crafted by Maestro Tabernero Don Luis Contreras in the mountainous coniferous region of Jalisco. Single-distilled using local clay pot stills, pit-roasted with black oak timber, and fermented in wooden ground tubs, it is renowned for its iconic, intensely funky, and polarizing profile defined by cultured dairy, savory notes, and bright tropical fruit.
Food Pairing: Aged blue cheese, charcuterie, rich mole dishes, roasted game meats, or grilled pork belly.
Tasting Notes : Clear with light viscid tears, presenting a full-bodied, rich, and rounded mouthfeel.
Nose : Bold, distinct notes of blue cheese, cultured butter, aged gouda, orange peel, and earthy coniferous forest pine.
Palate : Lactic acidity, sweet roasted agave, fermented butter, ripe mango, wild berries, and cashew nuttiness.
Finish : Long, warm, and savory with lingering blue cheese funk, fruit sweetness, and clay-pot minerality.
Serve : Serve neat at room temperature in a glass tasting vessel or traditional copita.
