The constant, restless motion of the sea intensely agitates the bourbon, forcing it deep into the barrel wood. Combined with extreme temperature fluctuations and the salty ocean air, this process rapidly accelerates maturation, creating a deeply caramelized, dark, and slightly briny flavor profile that you won't find anywhere else.
