J.P. Wiser’s 35 Year Old Canadian Whisky

J.P. Wiser’s 35 Year Old is an exceptionally mature Canadian whisky released as part of the 2017 Northern Border Collection. Produced at Hiram Walker & Sons in Windsor, Ontario, it combines long-aged corn whisky matured in used ex-Bourbon barrels with rye whisky matured in virgin oak. It was bottled at a robust 50% ABV after a minimum of 35 years of maturation.

Food Pairing: Pairs well with aged cheddar, roasted nuts, smoked meats, maple-glazed dishes, apple desserts and dark chocolate.

Tasting Notes: Rich and mature with caramel apple, dried fruit, vanilla, maple sweetness, rye spice and seasoned oak.

Nose: Dried cloves, baked rye bread, ginger and orange-honey notes with mature oak and subtle smoke.

Palate: Creamy and rich with caramel apple, dried fruit, vanilla, mature oak and warming rye spice.

Finish: Long and warming with sweet vanilla, spice and a pleasantly dry oak character.

Serve: Best enjoyed neat or with a small amount of water.
