About the Istine Cavarchione Chianti Classico 2019 750ml
Tasting Notes: This wine is both, dark and smooth, and uplifted and mineral. The nose gives intense aromas of ripe red fruits, cherry and hints of spice and underbrush. The palate is fine and balanced.
Ageing/Vinification: Fermentation is 15-20 days in concrete tanks at a controlled temperature (max 28°C). Submerged cap maceration for 45 days in concrete tanks. Aged 12 months in 20 or 30hl Slavonian oak casks and almost 1 year of bottle maturation before being released.
Vineyard: Grapes from Cavarchione, 6h located near the small village of Vertine in Gaiole in Chianti and that has been planted between 2009 and 2010. 420m above seal level with east/south-east exposure on soil that is very rich in skeleton with alternating marly limestones and a prevalence of Galestro stones

New leather, forest floor and pipe tobacco aromas mingle with notes of wild mint on this delicious red. Firmly structured and elegant, the linear, savory palate features juicy Morello cherry, crushed raspberry and licorice set against taut, refined tannins. Drink 2023–2031.
