Zýmē 'From Black to White' Il Bianco 2021 is a unique, deeply complex, and aromatic dry white wine produced by Celestino Gaspari in the Veneto region. Named after its primary grape, Rondinella Bianca—a rare white mutation of the dark-skinned Rondinella grape discovered in the estate's vineyard—it presents a bright straw-yellow color with pale green reflections. The nose is captivating, offering expressive aromas of acacia flower, jasmine, pink grapefruit, golden apple, and subtle hints of mint and elderflower. On the palate, it is medium-bodied, velvety, and rich, featuring vibrant citrus and stone fruit flavors underpinned by a crisp, lively acidity and a lingering, saline mineral finish.
