About the Hinomaru Whisky Signature 1823
Hinomaru Signature 1823 is a Japanese malt whisky produced by Kiuchi Brewery at the Yasato Distillery in Ibaraki Prefecture. Made entirely from malt whisky distilled at Yasato, including some malt from barley grown in the Hitachino region, it combines whiskies matured separately in Bourbon, Rum and Sherry casks.
Food Pairing: Pairs well with grilled beef, roasted pork, mushrooms, aged cheese, dried fruit and dark chocolate.
Tasting Notes: Malty and fruit-forward with apple, melon, Sherry influence, earthy notes, wood and warming spice.
Nose: Malt, apple, melon and fruit with Sherry-cask aromas, earthy porcini and subtle sulphury notes.
Palate: Sweet malt followed by earthy character, seasoned wood and spice.
Finish: Warming and moderately lingering with malt sweetness, oak and spice.
Serve: Enjoy neat, with a few drops of water, over ice or in a Japanese highball.
