Champagne Hélène Beaugrand Derrière La Cabane Blanc de Blancs Extra Brut is a precise, vibrant, and mineral-driven grower Champagne crafted from 100% Chardonnay. Sourced from "Derrière la Cabane," a mid-slope parcel in Montgueux with 90-million-year-old Turonian limestone and flint soils, the wine undergoes stainless steel tank fermentation, complete malolactic fermentation, and at least 36 months of aging on its lees before disgorgement with a low Extra Brut dosage. In the glass, it presents a bright pale-gold hue with a fine, persistent perlage. The nose opens with inviting aromas of lemon zest, green apple, white peach, toasted almonds, and cardamom, while the palate is crisp, focused, and beautifully textured with lively citrus notes, biscuity nuances, and a long, salty finish.
Food Pairing: Pairs wonderfully with fresh oysters, grilled langoustines, sea urchin, scallop crudo, sushi, poached white fish, and aged goat cheese.
