Champagne H. Billiot Fils Millésime Ambonnay Grand Cru is a complex, rich, and expressive vintage Champagne produced by Laetitia Billiot from estate-grown vines on the steep, south-facing mid-slopes of Ambonnay. Crafted from a traditional blend of Pinot Noir and Chardonnay, it undergoes fermentation without malolactic conversion to preserve the crisp natural acidity and chalky terroir expression. In the glass, it shows a pale golden color with tiny, persistent bubbles. The bouquet features ripe tree fruits, citrus peel, toasted brioche, and delicate white flowers. On the palate, it is full-bodied, structured, and vinous, displaying balanced layers of red apple, lemon curd, and toasted almonds supported by a taut saline-mineral finish.
