Signatory Vintage Symington's Choice Glenrothes 1997

Signatory Vintage "Symington's Choice" Glenrothes 1997 is an ultra-rare, long-matured single-cask single malt hand-selected by Andrew Symington, founder of Signatory Vintage. Distilled in 1997 at The Glenrothes Distillery in Rothes, Speyside, this expression underwent multi-decade maturation in a single premium oak cask before being bottled at its natural cask strength of 52.4% ABV. Presented without chill filtration or artificial coloring, it offers a deeply complex, velvety profile showcasing Glenrothes’ signature weight and ester-rich fruitiness alongside intense oak structure and sherry-wood depth.

Food Pairing: Pairs exceptionally well with dark chocolate ganache, sticky toffee pudding, roasted game with berry reduction, aged Gouda, or enjoyed neat as a meditative digestif.

Tasting Notes: A rich, well-aged Speyside single malt featuring notes of dark chocolate, stewed raisins, orange marmalade, pipe tobacco, espresso bean, and polished oak woodiness.

Nose: Fragrant and complex with aromas of dried figs, dark raisins, candied orange peel, beeswax, cocoa powder, and polished mahogany.

Palate: Full-bodied, rich, and mouth-coating with layers of black cherry compote, brown sugar, espresso bean, dark honey, and refined wood tannins.

Finish: Long, warm, and lingering with persistent dark fruit syrup, cocoa nibs, soft citrus oil, and gentle oak spice.

Serve: Best enjoyed neat in a Glencairn glass or copita after allowing it to breathe for several minutes to unlock its complex maturation layers.
