Fuenteseca Blanco 3 Year Old Tequila (Cosecha 2020) is an exceptional, vintage-dated, and highly-proofed pure expression of blue agave that showcases the heights of artisanal tequila craftsmanship. Masterfully crafted by Enrique Fonseca at the El Pandillo distillery (NOM 1146) in Jalisco, this Cosecha expression is made from over-ripe Highland pinto Blue Weber agave grown at over 5,000 feet of elevation. The agave hearts are slowly cooked in autoclaves and natural fermentation follows, before being twice-distilled in copper pot stills. Rather than being bottled immediately, this ultra-premium Blanco is uniquely rested in stainless steel tanks for a full 3 years. This extensive resting period allows the liquid to settle, oxygenate, and marry, cutting down aggressive minerality and cultivating an incredibly rich, fruit-forward, and well-rounded profile that beautifully mirrors legendary historical vintages.

Food Pairing: Pairs wonderfully alongside citrus-marinated fish ceviche, grilled fish tacos with mango salsa, roasted pork carnitas, fresh guacamole with sea salt, or artisanal lemon-infused dark chocolate barks.

TASTING NOTES - A brilliant, crystal-clear, and bright liquid appearance displaying broad legs and a beautifully thick, viscous oiliness that luxuriously coats the palate.

NOSE - Deep and penetratively aromatic, opening with vibrant waves of rich sweet cooked agave, caramelized sugar, and warm baking spices like sweet cinnamon, layered with bright citrus peel, orange oils, and a delicate touch of honey.

PALATE - Rich, full-bodied, and remarkably complex on the arrival; the palate is immediately drowned in dominant flavors of sweet cinnamon, nutmeg, cloves, and intensely rich cooked agave, beautifully balanced by crisp orange peel bitterness, black pepper, and faint mineral nuances.
