Created in a collaborative effort between Victoria Distillers and the iconic Fairmont Empress Hotel in British Columbia, this gin is distilled in small-batch copper pot stills. The signature color and distinct earthy profile come from the infusion of butterfly pea blossom, which magically transforms into a bright lavender, pink, or fuchsia when mixed with citrus or tonic. The aromatic nose presents bold juniper, vibrant citrus, and a delicate floral elegance.
