Empress 1908 Elderflower Rose Gin is an artisanal craft spirit produced by Victoria Distillers in Sidney, British Columbia, Canada. Inspired by Victoria's reputation as "The City of Gardens," this expression is distilled in copper pot stills from a neutral grain spirit base using nine natural botanicals. The botanical bill features juniper, elderflower, red rose petals, lavender, orange peel, coriander seed, cinnamon bark, orris root, and black carrot. Post-distillation infusions of rose petals and black carrot give the gin a vibrant, all-natural ruby-rose hue. It offers a delicate floral complexity balanced by crisp citrus, soft spice, and traditional juniper.

Food Pairing: Fresh oysters, goat cheese crostini, berry tarts, lemon shortbread, smoked salmon, and fresh fruit pavlova.
