Dunville’s 21 Year Old Palo Cortado Sherry Cask Finish Single Malt Irish Whiskey

Dunville’s 21 Year Old Palo Cortado is a mature Irish single malt from the historic Dunville’s brand, now produced under the stewardship of Echlinville Distillery. The whiskey is initially matured in ex-Bourbon casks before extended finishing in rare Palo Cortado sherry casks, creating a rich combination of mature malt, dried fruit, nuts and sherry character. The standard release is bottled at 46% ABV and non-chill filtered.

Food Pairing: Pairs well with aged cheese, roasted almonds and hazelnuts, cured meats, fruitcake, dark chocolate, fig desserts and crème caramel.

Tasting Notes: Rich and mature with layers of dried and stewed fruit, chocolate, nuts, honey and well-integrated oak.

Nose: Apricot, stewed plum, raisins, dried fruit, dark chocolate and toasted nuts.

Palate: Candied orange peel, fig, honeyed malt, roasted hazelnuts, mature oak and gentle spice.

Finish: Long and complex with almond, roasted coffee, sweet tobacco, dried fruit and lingering oak.

Serve: Best enjoyed neat or with a few drops of water.
