Dos Maderas 5+5 PX Cask Aged Rum is a fascinating, award-winning expression that showcases an extraordinary "triple-aging" process spanning two completely different continents. Crafted by the historic house of Williams & Humbert, the journey begins in the Caribbean, where fine rums from Barbados and Guyana are column-distilled and matured in American oak barrels for an initial 5 years.
The rum is then shipped to the sun-drenched region of Jerez, Spain, where it undergoes a double-phase finishing process using a traditional Sherry Solera system. It is first aged for 3 years in casks that previously held the distillery's internationally acclaimed "Dos Cortados" 20-Year-Old Palo Cortado Sherry. Finally, it spends an additional 2 years in casks that held "Don Guido" 20-Year-Old Pedro Ximénez (PX) Sherry. This final, heavy PX cask seasoning infuses the rum with an unparalleled, decadent richness, completely blurring the lines between a premium aged spirit and a luxurious dessert wine.
Food Pairing: Rich chocolate fondant, artisanal blue cheese, warm fig tarts, pan-seared duck with a cherry reduction, or a fine premium cigar.
TASTING NOTES Deep, dark mahogany amber with intense ruby highlights; offers a remarkably lush, viscous, and syrupy mouthfeel that entirely coats the tongue.
NOSE Powerfully aromatic and dessert-forward, opening with intense waves of dark molasses, sweet brown sugar, and vanilla fudge, quickly giving way to the heavy sherry influence of juicy raisins, dried figs, dates, and a gentle touch of toasted oak.
PALATE Luxuriously sweet, rich, and deeply complex; initial flavors of dark honey, maple syrup, and toffee are masterfully met by a wave of stewed plums, dark chocolate, and roasted nuts. The Palo Cortado wood breaks through on the mid-palate, adding structural balance with notes of aged leather, tobacco leaf, and a fine hint of spice.
FINISH Exceptionally long, warm, and velvety, leaving a lingering, mouth-coating trail of sweet Pedro Ximénez grapes, dark cocoa, vanilla bean, and a sophisticated, dry wood-smoke finish.
SERVE Best enjoyed strictly neat at room temperature in a snifter or a spirits tulip glass to fully appreciate the complex, slow-unraveling layers of the Solera wood.
