About the Don Mateo The Legacy Edition Mezcal
An artisanal mezcal made by maestro mezcalero Don Emilio Vieyra Rangel at El Limón ranch in Michoacán. It uses Cupreata agave cooked in an underground pit oven, naturally fermented for eight days, and distilled in pine and oyamel Filipino-style stills. It was rested in glass for five years.
Food Pairing: Rich Oaxacan mole negro, grilled meats, roast pork, and aged cheeses.
Tasting Notes : Rested in glass for five years, this artisanal spirit exhibits a full, round body with a smooth, refined texture and a distinctively bright, complex character.
Nose: Full and bright with fresh notes of orange, lime, vanilla, orange creamsicle, light pine, and subtle savory undertones.
Palate : Full-bodied and round, featuring notes of sweet pine, Red Hots candy coating, rock candy, subtle bubblegum, orange soda, asparagus, and a delicate touch of cilantro.
Finish : Medium finish showcasing lingering notes of leather, roasted root vegetables (carrots, potatoes), and subtle earthy minerals.
Serve : Served neat at room temperature, ideally in a wide-rimmed glass or traditional copita, accompanied by fresh orange slices.
