Domaine Les Aphillanthes Rasteau

Crafted in the sun-drenched Southern Rhône Valley of France, Domaine Les Aphillanthes Rasteau is a rich, powerful red wine produced by acclaimed vigneron Daniel Boulle and his family. Spanning pristine biodynamically farmed vineyards, the estate is renowned for its low-yielding, old-vine Grenache, Mourvèdre, and Syrah growing on iconic galets roulés (rounded river stones) and clay-limestone terraces. The unique terroir of Rasteau captures intense solar heat during the day while providing excellent drainage and mineral depth, giving the wine its signature muscular structure, velvety concentration, and fragrant garrigue complexity. Practicing certified biodynamic farming, Daniel Boulle ensures minimal intervention from vine to bottle. Hand-harvested with strict sorting, the grapes undergo ambient yeast fermentation in concrete vats with gentle extraction. Aged predominantly in concrete vats and large neutral oak foudres, the wine preserves its vibrant fruit character, earthy spice, and rich texture without being masked by heavy oak influence.

Food Pairing: Grilled ribeye steak, roasted rack of lamb with rosemary, slow-braised beef short ribs, wild game ragù, duck breast with blackberry glaze, sausage and bean cassoulet, and aged French cheeses like Comté or Roquefort.
