Domaine Hubert Lamy Chassagne-Montrachet Le Concis du Champs 2022

Crafted in the iconic Côte de Beaune region of Burgundy, France, Domaine Hubert Lamy Chassagne-Montrachet 'Le Concis du Champs' 2022 is a masterclass in white Chardonnay precision produced by acclaimed vigneron Olivier Lamy. Sourced from the single village lieu-dit Le Concis du Champs, situated on the lower slopes of Chassagne-Montrachet near Puligny-Montrachet, the vineyard boasts alluvial clay-limestone soils rich in limestone gravel and active chalk. Renowned for his obsessive canopy management, high-density vine planting, and hyper-precise vinification, Olivier Lamy captures a stunning balance of textural weight and electric mineral cut. Hand-harvested with rigorous berry selection, the grapes undergo gentle pneumatic pressing and native yeast fermentation. Maturation takes place in larger neutral French oak demi-muids (300L to 600L barrels) with minimal new oak to preserve fruit clarity, followed by aging on fine lees without battonage (stirring) before being bottled with exceptional purity and tension.

Food Pairing: Pan-seared sea scallops with lemon-herb butter, roasted lobster tail, grilled halibut, roast chicken with black truffle cream sauce, crab cakes, and artisanal French cheeses like Époisses, Comté, or Saint-Marcellin.
