Domaine des Malandes Chablis 1er Cru Vau de Vey

Crafted in the northernmost wine region of Burgundy, France, Domaine des Malandes Chablis 1er Cru 'Vau de Vey' is an exceptional, highly precise white Chardonnay produced by the Marchive family. Located on steep, east-facing slopes in a narrow side valley along the left bank of the Serein River, the Vau de Vey Premier Cru vineyard is famed for its cool microclimate and dramatic 50% inclines. The vines, planted in ancient Kimmeridgian marl soils rich in fossilized oyster shells (Exogyra virgula), yield fruit with striking aromatic purity and piercing mineral tension. Managed under sustainable and organic viticulture practices, the hand-harvested Chardonnay undergoes gentle pneumatic pressing and pneumatic temperature-controlled fermentation using ambient yeasts. A small portion (approximately 10% to 15%) ferments and ages in French oak barrels to impart subtle textural roundness, while the remaining majority matures in stainless steel vats on fine lees for 10 to 12 months, preserving classic Chablis energy and oyster-shell salinity.

Food Pairing: Fresh oysters on the half shell, pan-seared sea scallops, goat cheese (Chèvre), grilled seabass, shrimp scampi, king crab legs, and light seafood pasta dishes.
