Domaine de Pallus Chinon Les Pensees de Pallus

Crafted in the famed Loire Valley of France, Domaine de Pallus Chinon 'Les Pensées de Pallus' is an extraordinary, highly refined red Cabernet Franc produced by acclaimed winemaker Bertrand Sourdais. Born into a long line of Chinon winegrowers, Sourdais refined his world-class winemaking philosophy leading Dominio de Atauta in Ribera del Duero before returning to his family estate in Cravant-les-Côteaux to elevate Chinon to Grand Cru-level precision. Sourced from estate plots situated on sandy-limestone and clay soils over limestone bedrock along the Vienne River, the vines are farmed organically and biodynamically. Hand-harvested with strict double sorting, the low-yielding Cabernet Franc undergoes long, gentle maceration (up to 30 days) with ambient yeasts in open concrete vats. The wine matures gracefully for 12 to 18 months in neutral French oak barrels and 2,000-liter foudres followed by an extended period in concrete tanks, yielding a benchmark Chinon celebrated for its silky texture, intense aromatic purity, and fine-grained longevity.
