About the Domaine de Chevalier Blanc Pessac Leognan
Crafted in the Pessac-Léognan appellation of Graves, Bordeaux, France, Domaine de Chevalier Blanc is globally revered as one of the finest, most prestigious dry white wines in the world. Situated in Léognan, this historic estate—a Grand Cru Classé de Graves—is renowned for its unique terroir surrounded by pine forests that create a protective microclimate. The wine is a classic Bordeaux Blanc blend dominated by Sauvignon Blanc for structure, aromatic intensity, and acidity, rounded out by Semillon for richness, body, and aging potential. Sourced from gravelly clay and black sand soils on a subsoil of clay and iron-rich sandstone, the grapes are hand-harvested in multiple selective passes (trie) to ensure optimal ripeness. Fermentation takes place in temperature-controlled French oak barrels, followed by 18 to 24 months of aging on fine lees with regular battonage, creating a white wine of unmatched elegance, textural density, and legendary longevity.
Food Pairing: Butter-poached lobster, pan-seared sea scallops, roasted sea bass with beurre blanc, roast chicken with wild morchella cream sauce, grilled turbot, and rich French cheeses like Comté or Époisses.
