About the Domaine A Stoney Vineyard Cabernet Sauvignon
Crafted in the cool-climate Coal River Valley of Tasmania, Australia, Domaine A 'Stoney Vineyard' Cabernet Sauvignon is an exceptional, elegant red wine produced by the iconic estate Domaine A. Originally established in 1973 by Peter Althaus and now expertly guided under the Moorilla winemaking umbrella, Stoney Vineyard is the historic, warm-microclimate site that put cool-climate Tasmanian Cabernet Sauvignon on the global map. Planted on ancient, stony gravel and clay soils over mudstone, the low-yielding vines benefit from long, sunny days tempered by cool ocean breezes, allowing slow, complete phenological ripening. Hand-harvested and strictly sorted, the fruit undergoes traditional, small-batch fermentation with ambient yeasts before maturing gracefully in fine French oak barriques for 18 to 24 months. The resulting Cabernet Sauvignon strikes a brilliant balance between bright, vibrant varietal fruit, savory complexity, and fine-grained structural longevity.
Food Pairing: Grilled ribeye steak, roasted rack of lamb with rosemary, pan-seared duck breast, braised beef short ribs, venison stew, and hard aged cheeses such as vintage Cheddar or Gouda.
