About the Chris Ringland Dimchurch Barossa Shiraz
Crafted in the legendary Barossa Valley of South Australia, Chris Ringland 'Dimchurch' Barossa Shiraz is an extraordinary, highly concentrated cult red wine produced by iconic winemaker Chris Ringland. Renowned globally for crafting some of Australia's most powerful, long-lived, and monumental Shiraz wines, Ringland sources this single-vineyard bottling from dry-farmed, historic old vines in the Ebenezer subregion of the northern Barossa Valley. The ancient, low-yielding vines are planted in deep red-brown earth over limestone, producing berries of immense flavor intensity and structural depth. Hand-harvested at peak maturity, the grapes undergo open-top fermentation with gentle cap management to extract rich color and fine, persistent tannins. The wine matures for a extended period—typically up to 36 to 42 months—in new French oak hogsheads, allowing its immense fruit concentration, alcohol, and oak structure to integrate into a seamless, velvety masterpiece.
Food Pairing: Slow-braised beef short ribs, dry-aged ribeye steak, roasted venison loin, barbecue brisket, rich lamb shanks, and sharp aged cheeses like vintage Cheddar or Gouda.
